Three Words: Grapefruit. Chia. Pudding.

I don’t know why I hadn’t thought of this before.  It’s so simple.  And so delicious.  And so nutritious.  O.M.G.

I had some extra grapefruit juice last week (homemade, of course!) and a moment of inspiration struck.  Instead of using water or non-dairy milk to make some chia pudding.  And then the clouds parted and a miraculous discovery was made.

Anyway, a little less conversation a little more recipe:

Grapefruit Chia Pudding (Vegan Gluten Free)

  • 1 part chia seeds
  • Juice of 1/2 grapefruit
  • If needed, a tiny bit of vanilla and/or sweetener of your choice (I didn’t use either)

1.  So easy!  Mix the chia seeds and the grapefruit juice and let the seeds do their gelling magic.

2. Marvel and enjoy.

This is going to start of an epic era of mixing homemade juice with chia seeds.  I’m too ready.  Next up I’m thinking Carrot Chia Pudding….thoughts?
